Asian super-tool …. da WOK

A wok needs only a few natural ingredients and is easy to use. This Asian super-tool is really great in our paleo kitchen. You only need a hand full of good things to create a beautifully tasty, fresh and healthy meal. Even if you don’t have mich time, a wok is fast to use.

You begin by heating oil in the wok, for example coconut oil. The first things to heat in the oil are the spices, so that their aroma and their active substances can dissolve into the fat. Too often people make the mistake of cooking and then adding spices like turmeric, ginger, cumin, ginger, cardamim and so on, to create taste, missing out on the healing powers of many spices and never tasting their full aroma. Not really very wise, if you ask me.

Then you put in whatever is going to need longer to cook, meats and ingredients like garlic and onions. To prevent things from getting too close to burning, you can add the fish sauce, water, lime juice, some bone broth or coconut oil, all in small amounts. Last but not least you add your veggies, those are the nourishing things that you want to cook, but keep crispy and fresh… oh and really truely at the very end you add fresh herbs if you have them. Cooking with a wok is cooking gently and step by step, in spite of the heat that is used.

Usually you use a wok on a lkarge flameand cook step by step but fast. your ingredients are not supposed to overcook, everything stays crisp and fresh. So it’s best to chop and prepare all you are going to use beforehand and have everything ready to load your wok with whatever, whenever it’s just the right time.

On this occasion I used:
– 150g of chicken
– 10 middle sized mushrooms
– 1 chard
– 1 lime
– 1 fresh chilli
– 1 thumb sized piece of ginger
– 1 thumb sized piece of fresh turmeric
– 3 cloves of garlic
– 1 teaspoon of pepper
– 1/2 teaspoon of pimento
– 1 tablespoon of cumin
– 4 tablespoons of fishsauce (sugar free)
– 1 cup of coconut milk (without additives)
– some coconut oil

First you cut all the ingredients the way you like them, not too coarse though. Make an extra pile of each element. Now heat the wok. If you are using a wooden or bamboo tool to stir, the temperature of the oil is just right if, when you dip you stirring tool in, bubbles appear.
Now put turmeric, ginger, chilli, pepper, pimento and cumin into the oil. It will immediately begin to foam.
Add the meat, let it cook for a bit and then stir, let it cook again and stir, until it is almost ready for eating. While you’re cookiong the meat, add the fish oil and garlic. The fish sauce smells a lot more intense at first than it will taste.
Add the lime’s juice.
Now add the sliced mushrooms and top with your chopped chard. pour on the cup of coconut milk and wait for it to boil. stir thoroughly and let it boil again. done
