Ginger-Coconut-Egg with spicy fruity salad

Hello Wild Ones… today I have another great breakfast creation for you, something tropically fresh and tasty … and that on your breakfast plate at home! Yes, it’s going to be light fluffy scrambled egg with ginger and coconut milk, accompanied by a delicious orangey spicy tomato and spring-onion salad.

Farther down this post you can watch me conjuring this scrumptious dish in my video, but first I’m gonna list up all the ingredients for you:

finely chopped ginger
ghee for your frying pan
3 eggs
1/2 cup of coconut milk
salt and pepper

2 large tomatoes
1 orange
1 spring onion
1 fresh red chilli – or half, if you don’t like it too hot
juice of 1/2 a lime
fresh basil
fresh peppermint
salt and pepper
olive oil

Put 1 good tablespoon of ghee in your pan, chop the ginger and ad it to the ghee and leave it to simmer so that the ghee picks up the gingery taste.
Crack your eggs into a bowl, add the coconut milk, salt and pepper and give it a really good stir, so that it begins to become slightly frothy.
Pour into the pan and leave it all to fry for a little bit. When it begins to become firm, turn it in slabs to get it cooked through.
When it’s done arrange it on one side of your plate, leaving enough space for your salad.

Cut the tomatoes into chunks, peel the orange and chunk it also, chop the spring onion, put all into a bowl. Cut the chilli into really small bits and chop the basil and peppermint, add all to the salad.
Add salt and pepper and the lime juice, mix all well with your fingers.
Arrange the salad onto the free part of your plate and add as much olive oil as you like.
