Quick, easy, delicious – One great paleo breakfast

Well here’s one great way of getting a full nutritious paleo start into your day. This is the kind of breakfast I really enjoy really often, because there’s everything you need in it and it’s fast and easy to make.

Of Course there are endless variations of a good breakfast, and I like to experiment. Maybe I’ll make a series out of this: `Quick Paleo Breakfast Ideas´.

This one consists of two boiled eggs, an avocado salad and a special coffee. I feel wide awake and strong like a horse after one of these! Well Wild-Horse being my name, I should.

Put the eggs in water to boil.
While they’re boiling, spoon the avocado out of it’s jacket into a bowl. Add the juice of half a lime, add salt and pepper. Chop a smallish onion into small chunks. Pour olive oil over it all and stir. That’s it!
Optionally you can add one tomato sliced. I didn’t have one today, but it’s delicious without also.
I recommend Himalaya mountain salt, as it is full of minerals and precious trace elements.

Now my special coffee: Personally I use a French press. I find it very convenient and it makes a great coffee.
The special bit about this wakey wakey variation is that I add three or four cardamom pods and a pinch of cayenne pepper to the ground coffee. Then after leaving it to stew for about four minutes, I drink it black and of course, unsweetened.
This variation it easy on my tum, and gives me an extra kick of brightness.
