Tomato-beech-leaf salad … spring blessing!
Who has ever eaten fresh young beech leaves before then? I was out in the woods to pick some yesterday, to make a delicious salad. Beech leaves should be really young and fresh to enjoy them raw in a salad. And just right now, they are absolutely perfect.
These leaves are so full of life and vitamins and minerals, that they are a must really, in spring time, when they are just so delicate and soft. They have a delicious freshness about them. You can just pick them off the low hanging branches. Of course, make sure you are in the woods a bit and not right near a road, so that they are as unpolluted as possible. While you are collecting them, pick off the little brown husks that used to protect the leaves while they developed, before they opened up. They are too chewy to enjoy.
Here are the ingredients for two portions of my really easy to make Tomato beech leaf salad:
Two good handfuls of fresh young beech leaves, chopped into strips
Five middle sized tomatoes, sliced
One smallish onion, finely sliced
A pinch of Himalaya salt
Freshly ground pepper
Two to three tablespoons of balsamico vinegar
A good gush of olive oil
That really is all you need. The ingredients are so wonderfully intense, that any more might spoil it. Something you could add if you wanted, is some ground nuts or pine seeds. But that’s not necessary.
I love this kind of foraging to make my diet more exciting and more natural.
